Ingredients
Base
- 1 cup cooked rice or quinoa Or cauliflower rice for low carb option
- 2 cups chopped romaine lettuce Or spinach for more nutritious option

- 1 pound lean ground beef or turkey
- taco seasoning 1 packet
- black beans Optional vegetarian option
- lentils Optional vegetarian option
Toppings
- 1 cup salsa Choose mild to hot as desired
- 1/2 cup guacamole
- 1/4 cup sour cream or Greek yogurt
- 1/2 cup shredded cheese Cheddar, Monterey Jack or cotija
- 1/2 cup cooked corn
- 1/4 cup pickled onions Optional
- 2 tablespoons chopped cilantro
- 1 lime Cut into wedges for serving
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef or turkey and cook until browned, breaking it up with a spoon. Drain any excess grease.
- Stir in the taco seasoning and 1/2 cup of water. Let it simmer for 5-10 minutes, allowing all the flavors to meld.
- While the meat is cooking, prepare your base. Cook rice, quinoa, or cauliflower rice according to package instructions. If using lettuce, wash and chop it.
- To assemble your bowl, first add a layer of your chosen base. Then, spoon the seasoned meat on top. After that, add the various toppings. Feel free to use any or all of your favorite toppings.
- Finally, sprinkle with cilantro and serve with lime wedges.
Notes
Feel free to adjust the seasoning to your taste. Add chili powder for more heat or cumin for a smoky note. Customize the toppings based on your preferences. For a vegetarian option, swap the meat for black beans or lentils. To make it vegan, remove dairy-based toppings and use plant-based alternatives. For a low-carb version, use cauliflower rice and avoid high-carb toppings.
