  • 1 can Rotel tomatoes undrained
  • 16 oz Velveeta cheese cubed

Optional Protein

  • 1 lb Ground beef or sausage cooked and drained

Optional Spices

  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Paprika
  • 1/4 tsp Cumin

Optional Add-ins

  • Diced jalapeƱos to taste
  • Hot sauce to taste
  • 1/2 cup Diced bell peppers
  • 1/2 cup Corn
  • 1/2 cup Black beans rinsed and drained
  • 1/4 cup Fresh cilantro chopped, for garnish

Instructions
 

  • Prepare Ingredients: Dice the Velveeta cheese into small cubes. If using ground beef or sausage, cook it in advance, breaking it into crumbles and draining any excess fat. Open your can of Rotel tomatoes.
  • Combine Ingredients: Heat a medium-sized skillet or saucepan over medium heat. Add the pre-cooked ground beef or sausage (if using). Stir for 1-2 minutes to warm it up.
  • Melt Cheese: Gradually add the Velveeta cubes, stirring continuously to prevent sticking. Once the cheese starts to melt, pour in the Rotel tomatoes (do not drain) and stir to combine.
  • Add Spices and Vegetables (Optional): If you're incorporating additional spices or veggies, mix them in during this step.
  • Simmer: Continue stirring until the cheese is fully melted and the dip is bubbling slightly. Reduce the heat to low to keep it warm.
  • Serve: Transfer the dip to a heatproof serving bowl immediately to maintain its creamy texture. Garnish with freshly chopped cilantro or a sprinkle of paprika for added visual appeal. Serve alongside tortilla chips, crackers, or vegetable sticks.

Notes

For a spicier dip, use hot Rotel tomatoes or add diced jalapeƱos. For a vegetarian option, skip the meat and add black beans, corn, or bell peppers. This dip can also be made in a slow cooker by combining all ingredients and cooking on low until melted and creamy, stirring occasionally.
