Ingredients
 

  • 1 cup butter softened (2 sticks)
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 cups Quaker rolled oats

Optional Add-ins

  • raisins to taste
  • chocolate chips to taste
  • nuts to taste

Instructions
 

  • Preheat your oven to 350°F (175°C). Prepare your baking sheet by lining it with parchment paper or a silicone baking mat.
  • In a large mixing bowl, cream the softened butter with the brown and granulated sugars until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Slowly add the dry mixture to the creamed butter and sugar, mixing until just combined. Do not overmix.
  • Fold in the rolled oats and any optional add-ins like raisins, chocolate chips, or nuts. Make sure everything is evenly distributed.
  • Scoop out portions of dough (about 1-2 tablespoons each) and gently roll them into smooth, even-sized balls. Place the dough balls onto the prepared baking sheet, leaving about 2 inches of space between each. Lightly flatten the tops of the dough balls with your palm or the back of a spoon.
  • Bake for 8-10 minutes, or until the edges are golden brown and the centers look slightly underbaked.
  • Remove the tray from the oven and let the cookies cool on the baking sheet for 5 minutes. Transfer the cookies to a wire rack to cool completely.

Notes
