  • 1 ½ cups rolled oats
  • 1 ½ cups boiling water
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt

Instructions
 

  • Combine rolled oats and boiling water in a bowl. Let it sit for 20 minutes.
  • In a separate bowl, cream the softened butter with both sugars until light and fluffy.
  • Beat in the eggs one at a time, then add the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Add the soaked oats to the batter and stir gently until everything is well combined. Avoid overmixing.

  • Pour batter into a greased and floured 9x13 inch baking pan.
  • Bake in a preheated oven at 350°F (175°C) for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Notes
