Gluten Free English Muffins

Ingredients
- 2 cups gluten-free all-purpose flour blend with xanthan gum
- 1 teaspoon salt
- 1 tablespoon sugar
- 2.25 teaspoons active dry yeast 1 packet
- 1 cup warm milk dairy or non-dairy
- 2 tablespoons melted butter dairy or non-dairy
- 1 large egg
- 1/4 cup apple cider vinegar
- Cornmeal for dusting
Instructions
- Activate the Yeast: In a large bowl, dissolve the yeast and sugar in warm milk. Let it sit for 5-10 minutes, until foamy.
- Combine Dry Ingredients: In a separate bowl, whisk together the gluten-free flour blend, salt, and xanthan gum. Afterward, add this to the yeast mixture.
- Add Wet Ingredients: Add the melted butter, egg, and apple cider vinegar to the wet ingredients. Mix well until a smooth batter forms.
- First Rise: Cover the bowl with plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
- Shape the Muffins: Gently deflate the dough and turn it out onto a lightly floured surface. Roll or pat the dough to about 1/2-inch thickness. Using a 3-inch round cutter, cut out the muffins.
- Second Rise: Place the cut muffins on a baking sheet dusted with cornmeal. Sprinkle more cornmeal on top. Cover and let rise for another 30 minutes.
- Cook on a Skillet: Preheat a lightly oiled skillet over low heat. Place the gluten-free English muffins on the skillet and cook for 8-10 minutes per side, until golden brown and cooked through.
- Cool and Split: Transfer the cooked gluten-free English muffins to a wire rack to cool completely. Once cooled, split them using a fork. Afterward, toast and serve.
