Ingredients
 

Wet Components

  • 2 ripe avocados mashed
  • 2 large eggs
  • 1/2 cup milk dairy or non-dairy
  • 1/4 cup melted butter or oil
  • 1 tablespoon lemon juice

Dry Components

  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Flavor Boosters

  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • Mash avocados in a large bowl until smooth.
  • Add eggs, milk, melted butter or oil, and lemon juice to the mashed avocado. Mix well.
  • In a separate bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  • Gradually add dry components to wet components, mixing until just combined. Don't overmix.
  • Stir in vanilla extract and chopped nuts (if using).
  • Pour batter into the prepared loaf pan, spreading evenly.
  • Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and serve.

Notes
