Ingredients

- 2 ripe avocados mashed
- 2 large eggs

- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt

- 1/2 cup chopped walnuts or pecans optional
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- Mash avocados in a large bowl until smooth.
- Add eggs, milk, melted butter or oil, and lemon juice to the mashed avocado. Mix well.
- In a separate bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
- Gradually add dry components to wet components, mixing until just combined. Don't overmix.
- Stir in vanilla extract and chopped nuts (if using).
- Pour batter into the prepared loaf pan, spreading evenly.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and serve.
