Balsamic Chicken Recipe

Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1/2 cup balsamic vinegar aceto balsamico di Modena recommended
- 1/4 cup olive oil
- 3 cloves garlic minced
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tsp dried rosemary or 2 tsp fresh rosemary, chopped
- 1 tsp dried thyme or 2 tsp fresh thyme, chopped
- 1/2 tsp salt adjust to taste
- 1/4 tsp black pepper
Instructions
- In a medium bowl, whisk together balsamic vinegar, olive oil, minced garlic, honey, Dijon mustard, rosemary, thyme, salt, and pepper.
- Place chicken breasts or thighs in a resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring it's fully coated.
- Refrigerate for at least 30 minutes, or up to 24 hours.
- Pan-Searing: Heat a well-oiled skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Reduce heat to medium, cover, and cook through, or finish in the oven.
- Oven-Baking: Preheat oven to 375°F (190°C). Place marinated chicken in a baking dish, pour leftover marinade over chicken. Bake for 20-25 minutes for breasts, or up to 35 minutes for thighs, until internal temperature reaches 165°F (74°C).
- Grilling: Preheat grill to medium heat and lightly oil the grates. Shake off excess marinade. Grill chicken for 5-6 minutes per side, basting with extra marinade. Remove when internal temperature reaches 165°F (74°C).
