Base Ingredients
- 2 cups cooked Basmati rice cooled
- 3 large eggs
Aromatics and Vegetables
- 1 medium onion finely chopped
- 2 cloves garlic minced
- 2 green chilies finely chopped
- 0.5 cup mixed vegetables carrots, beans, peas
Spices and Seasonings
- 2 tablespoons soy sauce
- 1 tablespoon vinegar
- 1 teaspoon red chili powder
- 0.5 teaspoon turmeric powder
- 0.25 teaspoon garam masala
- 0.25 teaspoon mustard seeds
- A few curry leaves
- 2 tablespoons cooking oil
- To taste salt
- For garnishing fresh coriander leaves
Instructions
- Ensure your Basmati rice is cooked and cooled. Spread it out on a plate to prevent it from sticking together. This will result in perfect fried rice.
- In a bowl, whisk the eggs with a pinch of salt. Heat a tablespoon of oil in a pan over medium heat. Pour in the eggs and scramble until cooked. Remove the eggs from the pan and set aside. This step adds the key component to your fried rice.
- Add the remaining oil to the same pan. Once the oil is hot, add mustard seeds and curry leaves. Let them splutter for a few seconds. Subsequently, add the chopped onions, garlic, and green chilies. Sauté until the onions turn golden brown.
- Add the mixed vegetables to the pan. Sauté for about 3-5 minutes until they are tender. Furthermore, ensure the vegetables are cooked but still have a slight crunch.
- Add the red chili powder, turmeric powder, and garam masala to the pan. Sauté for a minute until the spices release their aroma. Be careful not to burn the spices. Indeed, this step is crucial for the dish's unique flavor.
- Add the cooked rice and scrambled eggs to the pan. Mix well, ensuring the rice is coated with the spices and vegetables. Use a spatula to break up any clumps of rice. Then, stir everything together.
- Pour in the soy sauce and vinegar. Mix well to combine. Add salt to taste. Garnish with fresh coriander leaves. Finally, give it a final stir before serving.
Notes
Adjust the spices to your liking. For a vegetarian/vegan option, omit the eggs and add tofu or paneer. Enjoy!
